Sausage Rolls

It’s sometimes a little difficult to get our kids to eat veggies, so what if there was a way to hide them in a favourite dish loved by many? These veggie-smuggling sausage rolls will be irresistible and some might even ask for more!

Ingredients:

  • 1 teaspoon oil
  • 1 onion finely chopped
  • 1 zucchini, grated
  • 2 small carrots, grated
  • 500g mince of your choice
  • 2 tablespoons tomato sauce
  • 1 egg, lightly beaten
  • 3 sheets of puff pastry
  • Egg or milk for glazing

Method:

  1. Preheat oven to 210 degrees. Line two oven trays with baking paper.
  2. Heat oil in a small frying pan, add the onion and cook over low heat until soft and transparent, let cool slightly.
  3. In a bowl combine onion, mince, zucchini, carrot, tomato sauce and egg. Use clean hands to mix thoroughly
  4. Lay pastry sheets on a lightly floured bench and cut in halves vertically. Divide the meat mixture into six portions and spoon mixture across the middle of all puff pastry rectangles.
  5. Roll the edges over and turn the long roll shape over so the pastry seam is underneath. Cut each long sausage roll as desired size and place on prepared trays
  6. Brush sausage rolls with milk or beaten egg using a pastry brush.
  7. Bake for 10 minutes, change the temperature of oven to 180 degrees and bake for another 15 minutes until golden and puffed.
  8. Serve with sauce and watch your little ones enjoy the hidden veggies!

 

Frozen Yoghurt Fruit Pops

Keeping kids cool in summer without buying truckloads of ice cream made easier and healthier!

Ingredients:

  • Greek yoghurt
  • Fresh diced fruit of your choice (example: strawberries, mango, kiwi)
  • Paddle pop sticks
  • Preferably a silicon tray, but any tray/container on hand will work

Method:

  1. Dice your fruit up and sit in the bottom of the trays
  2. Then fill the rest with yoghurt
  3. Put tray in the freezer and wait till frozen
