Fruit Kebabs

This is fun to get the kids to help with! If you do all the cutting and get them to make personalised kebabs, yum!

Ingredients:

  • Skewers
  • Choice of fruits

Method:

  1. Slice fruit in similar sizes and stick on skewer
  2. Choice of freezing the fruit or having it fresh

 

Avocado Brownies

Ingredients:

  • 1 large avocado
  • ½ cup unsweetened apple sauce
  • ½ cup maple syrup
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • ½ cup coconut flour
  • ½ cup unsweetened Dutch-processed (so it’s not bitter) cocoa powder
  • ¼ teaspoon sea salt
  • 1 tsp baking soda

Method:

  1. Preheat oven to 180 degrees
  2. Blend avocado, apple sauce, syrup and vanilla extract
  3. Pour into a bowl and whisk eggs
  4. Add in cocoa, coconut flour, sea salt and baking soda and stir until well-combined
  5. Grease an 8 x 8 cake dish with coconut oil and pour batter in
  6. Place in oven for 25 minutes, depending whether you like fudgier brownies maybe less time, or more of a cake-like brownie keep in oven for longer
  7. Serve as desired.
