Lemon and Coconut Bliss Balls

2 cups shredded coconut (sulphite free ie organic)

1 cup shredded coconut (extra for coating)

1/2 cup almonds

3 tbsp rice malt syrup

2 tbsp coconut oil

Zest and juice of 1 lemon (scrub the skin)

Place all ingredients into a food processor and blend for 1 minute, scraping down the bowl now and then if needed. Roll into small balls about the size of a 10c piece. Roll in extra coconut. Place on a tray to chill in fridge until firm, or freeze.

Tangy Lime and Coconut Bliss Balls

1/2 cup almonds

1/2 cup cashews

1.5 cups Medjool dates (pitted)

zest and juice of  3 limes

1/2 cup shredded coconut (sulphite free ie organic) for the coating

Add the almonds and cashews to the bowl of a food processor. Pulse until nuts are finely chopped. Try not to chop for too long or the nuts will become a paste and difficult to work with.

Add the dates, lime juice and zest. Pulse again until the mixture starts to come together and clump.

Shape the mixture into balls the size of a 10c piece. Roll in coconut to coat.

Store in fridge or freezer.

Super Protein Bliss Balls

2 cups Medjool dates

1 cup almonds

1 cup walnuts

1/4 cup cacao powder (or cocoa)

3 tbs chia seeds

3 tbs pepitas (pumpkin seeds)

3 tbs sunflower seeds

3 tbs oat bran (or almond flour  or LSA to be gluten free)

3 tbs vanilla whey powder (optional)

Shredded coconut for coating (sulphite free ie organic)

Blitz everything into a food processor until mixture starts to come together and clump. If this does not happen, the mixture is too dry. Add 1 tablespoons of warm water at a time until this happens.

Roll into balls the size of a 10c piece and roll in shredded coconut. Store in fridge or freezer.

Extras

Bliss balls tend to be coated in coconut. But for variety you can do:

Crushed macadamia

Crushed pistachios

Dust with cocoa or cacao powder

Orange, lime or lemon zest
